🛒 Ingredients

100 servings

100
  • 1 kg ripe bananas
  • 800 g granulated sugar
  • 2 tablespoons fresh lemon juice
  • Unsalted butter for greasing

Directions

  1. 1

Peel the bananas and slice them into thin rounds.

  2. 2

Place the banana slices in a heavy-bottomed saucepan with the sugar and lemon juice. Stir to combine.

  3. 3

Cook over medium heat, stirring frequently, until the mixture turns deep golden and thickens significantly — about 25–30 minutes.

  4. 4

Continue cooking until you can draw a clear line across the bottom of the pan with a wooden spoon.

  5. 5

Pour onto a buttered tray and spread evenly. Allow to cool completely at room temperature.

  6. 6

Once set, cut into small squares or roll into balls and wrap individually in cellophane or wax paper.

💡 Chef's Tip

The riper the bananas, the sweeter and more flavourful your candies will be. Overripe bananas with dark spots are ideal — don't throw them away!
