  • 2.2 lbs beef trotters (mocotó)
  • 2 tbsp oil
  • 1 onion
  • 3 cloves garlic
  • 2 tomatoes
  • 1 carrot
  • 8.5 cups water
  • Salt and pepper to taste
  • 1 bunch cheiro-verde (parsley and chives)
  • A few cilantro leaves

Directions

    Thoroughly clean the beef trotters and blanch them in boiling water for 10 minutes. Drain.

    In a large pot, sauté the onion and garlic in oil until golden brown.

    Add the beef trotters, tomatoes, and carrot. Mix well.

    Cover with 8.5 cups of water, season with salt and pepper, and simmer over low heat for about 2 hours until the broth becomes thick and gelatinous.
