Brigadeiro is Brazil's most beloved sweet: a silky chocolate fudge that melts on your tongue and disappears from the plate in seconds. With just four pantry staples and 20 minutes on the stove, you can recreate this iconic confection at home — perfect for parties, gifting, or an indulgent afternoon treat.

🛒 Ingredients

10 servings

10
  • 1 can sweetened condensed milk (14 oz / 395 g)
  • ¾ cup heavy whipping cream
  • 3 tablespoons sweetened chocolate powder or cocoa
  • 1 pinch of fine sea salt
  • Chocolate sprinkles or shredded coconut, for rolling

Directions

  1. 1

In a heavy-bottomed saucepan, combine the condensed milk, heavy cream, chocolate powder, and salt. Whisk until smooth before turning on the heat.

  2. 2

Cook over medium-low heat, stirring constantly with a silicone spatula. The mixture will begin to bubble and gradually thicken — keep stirring at all times to prevent sticking or burning.

  3. 3

When the mixture pulls cleanly away from the sides of the pan and bubbling subsides, remove from heat. For a frosting or sauce, stop here. For truffles, cook an additional 2–3 minutes.

  4. 4

Allow to cool to room temperature, then refrigerate for 30 minutes. With lightly buttered hands, roll into small balls and coat generously in chocolate sprinkles.

💡 Chef's Tip

Chilling the mixture is the key to perfectly shaped brigadeiros — if it feels too soft, return to the fridge for another 15 minutes. For a gourmet twist, roll in crushed pistachios or toasted coconut instead of sprinkles.
