🛒 Ingredients

4 servings

4
  • 1 can sweetened condensed milk (14 oz / 397 g)
  • 4 tbsp unsweetened cocoa powder
  • 1 tbsp unsalted butter (or margarine)
  • 1 pinch of salt
  • 1 cup chocolate sprinkles, for rolling

Directions

  1. 1

In a heavy-bottomed saucepan, melt the butter over low heat with the pinch of salt.

  2. 2

Add the sweetened condensed milk and cocoa powder, whisking until perfectly smooth.

  3. 3

Cook over low heat, stirring constantly for 10 to 12 minutes, until the mixture thickens and pulls away from the bottom of the pan.

  4. 4

Pour into a lightly buttered dish and let cool completely, at least 2 hours (overnight is even better).

  5. 5

Butter your hands, scoop a teaspoon of the mixture, roll into small balls and coat in chocolate sprinkles.

💡 Chef's Tip

To test if it's ready, tilt the pan: if the mixture slides away as one mass and briefly reveals the bottom, it's done. Overcooked brigadeiro turns hard as it cools; undercooked, it won't hold its shape. You can also serve it warm by the spoonful, without rolling.
