🛒 Ingredients

40 servings

40
  • 10 tablespoons whole powdered milk
  • 8 tablespoons granulated sugar
  • 6 tablespoons unsweetened cocoa powder
  • 2 cups water (approximately 400 ml)
  • Cocoa powder or chocolate sprinkles for coating
  • 1 tablespoon unsalted butter (optional, for extra creaminess)

Directions

  1. 1

In a large heavy-bottomed saucepan, combine the powdered milk, sugar and cocoa powder. Gradually pour in the water, whisking constantly until the mixture is completely smooth with no lumps.

  2. 2

Cook over medium heat, stirring continuously with a wooden spoon for 15 to 20 minutes, until the mixture thickens and pulls away cleanly from the sides and bottom of the pan.

  3. 3

Remove from heat, stir in the butter if using, then spread the mixture onto a lightly buttered plate. Allow to cool completely at room temperature for about 30 minutes.

  4. 4

Lightly butter your hands, scoop small portions of the cooled dough and roll each one between your palms to form smooth, uniform balls roughly the size of a walnut.

  5. 5

Roll each brigadeiro in cocoa powder or chocolate sprinkles until fully coated. Place in paper candy cups and refrigerate until ready to serve.

💡 Chef's Tip

Never stop stirring during cooking — constant movement prevents burning and guarantees a silky smooth texture. Store in an airtight container in the fridge for up to 5 days.
