British Mince Pies
Delicious little English tarts with golden shortcrust pastry, generously filled with fragrant dried fruits. A holiday classic to enjoy plain or dusted with powdered sugar.

- 8 oz cold butter, diced
- 2 3/4 cups all-purpose flour
- 1/2 cup golden superfine sugar
- 10 oz mincemeat (dried fruit mixture)
- 1 small egg
- Powdered sugar for decoration

Prepare the dough: rub the cold diced butter into the flour with your fingers until the mixture resembles breadcrumbs.

Mix in the sugar and a pinch of salt, then form into a firm ball of dough without adding any liquid.

Let the dough rest in the refrigerator if desired, or use it immediately.

Preheat the oven to 392°F. Line 18 cups of two tart tins with walnut-sized balls of dough.

Distribute the 10 oz of mincemeat evenly into each tartlet.

Shape small balls of dough, flatten them between your palms, and place them on top as lids.

Brush lightly with the beaten egg and bake for 15-20 minutes until golden brown.

Prepare these tartlets 1-2 days in advance; they keep for 3-4 days in an airtight container and reheat perfectly in the oven. Traditional mincemeat contains dried fruits, spices, and suet, but modern vegetarian versions are excellent.
