Directions

  1. 1

Preheat the oven to 350°F. Heat the oil and butter in an oven-safe Dutch oven.

  2. 2

Sear the beef until well-browned on all sides.

  3. 3

Sprinkle with flour, stir, and cook for an additional 2-3 minutes.

  4. 4

Add the garlic and all the vegetables, and cook for 1-2 minutes.

  5. 5

Pour in the red wine and beef broth, then add the bay leaves and thyme. Season to taste.

  6. 6

Cover and bake in the oven for 90 minutes.

  7. 7

Prepare the dumplings: mix the flour, baking powder, and suet, then add enough water to form a dough.

  8. 8

Shape into small dumplings and add them to the stew.

  9. 9

Continue cooking for 30 minutes until the dumplings are cooked through.

  10. 10

Sprinkle with fresh parsley and serve hot.

💡 Chef's Tip

You can replace the red wine with extra broth if you prefer. The dumplings can be prepared the day before. For a richer stew, let it simmer for 2-3 hours.
