British Treacle Tart
A delicious traditional British tart filled with rich, sweet golden syrup. The crispy shortcrust pastry contrasts wonderfully with the soft, caramelized filling, brightened by a subtle hint of lemon.

- 2 cups all-purpose flour
- 4.75 oz cold butter
- 14 oz golden syrup
- 5.3 oz breadcrumbs
- Zest of 2 lemons
- 1 egg, beaten
- 3 tbsp cold water
- Butter for greasing

Prepare the shortcrust pastry: pour the flour into a large bowl. Cut the butter into cubes and incorporate it into the flour by rubbing it with your fingers until the texture resembles fine breadcrumbs.

Add 3 tablespoons of cold water gradually and knead until a firm dough forms. Wrap in plastic wrap and refrigerate for 20 minutes.

Preheat the oven to 392°F and place a baking sheet inside to heat up.

Grease a 7-inch diameter springform tart pan with butter.

Reserve about 5.3 oz of dough for the lattice top. Roll out the remaining dough thinly on a floured surface.

Line the pan with the dough. Prick the base with a fork to prevent it from puffing up during baking.

Mix the golden syrup with the breadcrumbs and lemon zest. Pour over the dough.

Form a lattice with the reserved dough and place it over the filling.

Brush with the beaten egg and bake for 25-30 minutes until golden.
💡 Chef's Tip
For an even crispier crust, work with very cold butter. Golden syrup can be replaced with honey or molasses. Serve warm with sour cream or crème fraîche or vanilla ice cream.
