🛒 Ingredients

12 servings

12
  • 1 cup quinoa (about 180 g)
  • 1 garlic clove
  • Fine salt, to taste
  • 1 grated carrot
  • 1 grated zucchini
  • 4 tablespoons whole wheat flour
  • A drizzle of olive oil

Directions

  1. 1

Rinse the quinoa under cold water until the water runs clear, then drain it well.

  2. 2

Bring 2.5 cups of water to a boil in a saucepan.

  3. 3

In another saucepan, sauté the finely grated garlic in a drizzle of olive oil with a pinch of salt.

  4. 4

Add the quinoa and stir until every grain is coated in the oil and garlic.

  5. 5

Without turning off the heat, pour in the boiling water, lower the heat and cover the pan.

  6. 6

Cook until all the water has been absorbed — the quinoa is now ready.

  7. 7

Let it cool while you grate the carrot and the zucchini.

  8. 8

In a bowl, combine the cooled quinoa, the whole wheat flour and the grated carrot.

  9. 9

Squeeze the grated zucchini to remove excess water, then set that liquid aside.

  10. 10

Fold the drained zucchini into the quinoa mixture and stir until evenly combined.

  11. 11

Shape the mixture into patties with damp hands and chill them briefly before cooking.

💡 Chef's Tip

The secret to burgers that hold together: squeeze the zucchini really well and let the quinoa cool completely before mixing. If the mixture is too wet, add another spoonful of flour; if it's too dry, use a little of the reserved zucchini water. Resting the mixture in the fridge for 15 minutes before shaping makes the patties far easier to handle.
