🛒 Ingredients

6 servings

6
  • 3 cups raw unsalted peanuts
  • 3 cups granulated sugar
  • 3 cups water
  • 1 teaspoon baking soda

Directions

  1. 1

Combine peanuts, sugar, and water in a large saucepan. Bring to a boil over high heat.

  2. 2

Stir constantly with a wooden spoon until all the liquid has evaporated — keep stirring without stopping.

  3. 3

Lower the heat and continue stirring until the peanuts look matte and start pulling away from the sides of the pan.

  4. 4

Add the baking soda and stir vigorously for about 30 seconds; the mixture will foam slightly.

  5. 5

Immediately pour onto a marble surface or a lightly oiled baking sheet. Spread quickly with a spoon to prevent clumping.

  6. 6

Allow to cool completely, then break into pieces and serve.

💡 Chef's Tip

The golden rule: always use equal parts peanuts, sugar, and water. Double or triple the recipe freely — just keep the ratio the same. Work fast when spreading, as the caramel sets quickly. A cold marble slab gives the best result, but oiled parchment paper works great too.
