- 1
Preheat the oven to 400°F (350°F for convection). Boil the potato until tender, drain, and mash. Let cool.
- 2
Heat the oil in a non-stick skillet, add the ground pork and onion, and sauté quickly until the meat is browned.
- 3
Add the garlic, spices, broth, plenty of black pepper, and a pinch of salt. Mix well. Remove from heat and stir into the mashed potatoes. Let cool.
- 4
Roll out half of the dough and line the bottom of an 8 to 9-inch pie dish. Pour in the filling. Brush the edges of the dough with water.
- 5
Roll out the remaining dough and cover the pie. Press the edges firmly to seal, then trim any excess. Prick the top of the pie to allow steam to escape.
- 6
Brush the top with the beaten egg. Bake for 30 minutes until the crust is golden and crispy. Serve in slices with a green salad.
💡 Chef's Tip
Leftovers are delicious cold the next day, served with gherkins or pickles. You can prepare the filling 1 day in advance. For maximum crispiness, brush the dough with the egg wash 5 minutes before baking.
