  • 11.25 oz puff pastry
  • 4 tbsp brown sugar
  • 3 Braeburn apples
  • 4 tbsp red wine jelly
  • 3.4 fl oz crème fraîche or sour cream
  • 1 tbsp powdered sugar
  • 3 cardamom seeds

Directions

    Preheat oven to 350°F (175°C) and broiler to high. Remove pastry from refrigerator and let rest for 10 minutes.

    Cut 2 (5-inch) circles from the pastry using a plate. Sprinkle each circle with 1 tbsp brown sugar and broil for 5 minutes to caramelize.

    Peel, core, and thinly slice the apples. Arrange them on the tartlets, sprinkle with the remaining sugar, and bake for 20-25 minutes until golden.

    Heat the red wine jelly with a little water over low heat, then brush the warm tartlets.

    Whisk the crème fraîche with the powdered sugar and cardamom seeds. Serve warm with this cream.

💡 Chef's Tip

The red wine jelly can be prepared up to 1 month in advance. The tartlets can be caramelized a few hours before final baking.
