🛒 Ingredients

10 servings

10
  • 200 ml (¾ cup) heavy whipping cream
  • 2 cups (400 g) granulated sugar
  • 1½ tablespoons pastry emulsifier
  • 1 tablespoon ice cream flavor powder, any flavor (optional)
  • 4 heaping tablespoons full-fat powdered milk

Directions

  1. 1

Place the heavy cream in the freezer for 15–20 minutes, until it is very cold and just starting to thicken at the edges, without fully freezing.

  2. 2

Transfer the cream to a large mixing bowl. Add the granulated sugar, emulsifier, powdered milk, and flavor powder if using.

  3. 3

Beat with an electric mixer on high speed for at least 10 minutes, until the mixture doubles in volume and holds stiff, airy peaks.

  4. 4

Use immediately to frost cakes, fill pastries, or garnish your favorite desserts.

💡 Chef's Tip

Keep your mixing bowl and beaters in the refrigerator for 10 minutes before starting — it makes a real difference in volume and firmness. Try vanilla, strawberry, or chocolate flavor powders to customize your frosting.
