Directions
- 1
Bring water, butter and salt to a rolling boil in a saucepan. Remove from heat and add all the flour at once, stirring vigorously with a wooden spoon until the dough pulls away cleanly from the sides of the pan.
- 2
Let the dough cool for 5 minutes, then transfer it to a piping bag fitted with a large star tip (or a churro maker).
- 3
Heat oil in a deep pan to 350 °F (175 °C). Pipe 4–5 inch strips directly into the hot oil, snipping with scissors. Fry for 3–4 minutes, turning halfway, until deep golden.
- 4
Drain on paper towels, then toss immediately in the cinnamon-sugar mixture.
- 5
Fill churros with melted chocolate, dulce de leche, or jam using a thin piping tip, and serve warm.
💡 Chef's Tip
For extra-crispy churros, make sure the oil is at the right temperature before frying — too cool and they'll absorb oil; too hot and they'll brown before cooking through. A kitchen thermometer is your best friend here.
