🛒 Ingredients

20 servings

20
  • 2 litres (8 cups) whole milk
  • 800 g (4 cups) granulated sugar
  • 1 pinch of baking soda (optional, speeds caramelisation)
  • 1 tsp vanilla extract or 1 vanilla bean (optional)

Directions

  1. 1

Combine milk and sugar in a large heavy-bottomed saucepan. Add vanilla if using. Stir over medium heat until the sugar dissolves completely.

  2. 2

Bring to a gentle boil, stirring constantly, and maintain for about 15 minutes. Add the optional baking soda at this stage.

  3. 3

Reduce heat to low and continue stirring frequently for 45–60 minutes, until the mixture turns deep golden-amber and coats the back of a spoon.

  4. 4

Pour into sterilised glass jars or a heatproof dish and allow to cool completely before serving or refrigerating.

💡 Chef's Tip

Stir more frequently as the mixture thickens to prevent scorching on the bottom. A wide, heavy pan gives the best results. Keeps up to 2 weeks in the fridge in an airtight container.
