Directions
- 1
Season the ribs generously with salt and blanch in a large pot of boiling water for 10 minutes. Drain well.
- 2
Arrange the ribs in a baking dish, cover tightly with aluminum foil, and bake at 180 °C (350 °F) for 40 minutes.
- 3
Meanwhile, heat the oil in a saucepan over medium heat and sauté the chopped onion until soft and translucent.
- 4
Add the brown sugar and white vinegar, stirring until the sugar is fully dissolved.
- 5
Stir in the Worcestershire sauce, ketchup, bay leaf, chili powder, and water. Simmer over low heat for 30 minutes, stirring occasionally, until the sauce thickens.
- 6
Season with salt and pepper, remove the bay leaf, strain through a fine sieve, and set aside.
- 7
Remove the ribs from the oven, discard the foil, and brush generously with the BBQ sauce.
- 8
Increase the oven temperature to 220 °C (425 °F). Bake for 10 minutes, brush again, and return for 5 more minutes. Repeat once more to achieve a deep caramelized glaze.
- 9
Serve immediately with extra BBQ sauce on the side.
💡 Chef's Tip
For extra tender ribs, marinate them in the sauce overnight in the refrigerator before baking. Finish them on a hot grill for a smoky, char-grilled flavor that takes this dish to the next level.
