🛒 Ingredients

4 servings

4
  • 400 g (14 oz) fresh strawberries, hulled and halved
  • 1 cup (200 g) granulated sugar
  • ½ cup (120 ml) dry red wine
  • 1 tablespoon fresh lemon juice
  • ½ vanilla bean, seeds scraped (optional)

Directions

  1. 1

Place the hulled and halved strawberries into a medium heavy-bottomed saucepan.

  2. 2

Add the sugar, red wine, lemon juice, and vanilla seeds. Stir to combine.

  3. 3

Bring to a boil over medium heat, stirring occasionally to dissolve the sugar.

  4. 4

Once boiling, reduce the heat and simmer for 5 to 7 minutes until the sauce thickens slightly and coats a spoon.

  5. 5

Remove from heat, let cool, then blend and strain for a smooth coulis, or serve as-is for a rustic texture.

💡 Chef's Tip

Store in an airtight jar in the refrigerator for up to 5 days. For a non-alcoholic version, replace the wine with pomegranate juice for a similarly rich, fruity depth.
