  • 750 g (about 3 cups) fresh strawberries
  • ¾ cup granulated sugar
  • 2 tablespoons water
  • 1 teaspoon fresh lemon juice

    Wash and hull the strawberries, then halve them. For a chunkier sauce, leave some pieces larger.

    Combine strawberries, sugar, water, and lemon juice in a heavy-bottomed saucepan. Stir over low heat until the sugar dissolves and the berries begin releasing their juices.

    Continue simmering uncovered on low heat for 20–25 minutes, stirring occasionally, until the sauce thickens and coats the back of a spoon.

    Remove from heat and allow to cool completely before serving. Store in an airtight jar in the refrigerator for up to one week.

Blend and strain through a fine-mesh sieve for a smooth, pourable sauce. A splash of vanilla extract added at the end deepens the flavor beautifully.
