Wash and hull the strawberries, then halve them. For a chunkier sauce, leave some pieces larger.

Combine strawberries, sugar, water, and lemon juice in a heavy-bottomed saucepan. Stir over low heat until the sugar dissolves and the berries begin releasing their juices.

Continue simmering uncovered on low heat for 20–25 minutes, stirring occasionally, until the sauce thickens and coats the back of a spoon.
