🛒 Ingredients

10 servings

10
  • 2 large ripe mangoes, peeled and diced
  • 1 cup (200 g) granulated sugar
  • 1 cup (240 ml) water
  • 1 vanilla pod, split lengthwise
  • Juice of half a lime

Directions

  1. 1

In a saucepan, combine water, sugar and the split vanilla pod. Heat over medium heat, stirring until the sugar has completely dissolved.

  2. 2

Add the diced mango and lime juice. Reduce heat to low and simmer for 15 minutes, stirring occasionally, until the mango pieces are very soft.

  3. 3

Remove the vanilla pod and let the coulis cool to room temperature.

  4. 4

For a smoother texture, blend part or all of the coulis with an immersion blender. Refrigerate for at least 1 hour before serving. Store in an airtight jar for up to 5 days.

💡 Chef's Tip

For an ultra-smooth finish, strain the blended coulis through a fine-mesh sieve. Swap lime for freshly grated ginger to add a warm, spicy note.
