Creamy Cheese Tart with Candied Tomatoes

- 4.5 oz butter
- 1 egg
- 1 pinch salt
- 10.5 oz cream cheese
- 0.4 cup milk
- 3 eggs
- 3.5 oz grated parmesan cheese
- 12 oz cherry tomatoes
- 3 tbsp olive oil
- 3 tbsp white vinegar
- 1 tbsp honey
- 1 pinch pepper
- 1 pinch nutmeg
- 1 bunch fresh basil

Prepare the dough: mix the flour, butter, 1 egg, and a pinch of salt. Press into a tart pan and refrigerate for 15 minutes.

Prepare the filling: mix the cream cheese and milk until smooth. Add the 3 eggs, grated parmesan, salt, pepper, and nutmeg.

Remove the dough from the fridge and prick the bottom with a fork. Pour in the filling and bake at 347°F.

Cover with aluminum foil after 12-13 minutes of baking.

Meanwhile, slice the cherry tomatoes. Heat the olive oil with the white vinegar, honey, salt, and pepper. Pour over the tomatoes.

Once out of the oven, delicately arrange the tomatoes on the tart with a spoon, limiting the excess liquid. Garnish with fresh basil.
💡 Chef's Tip
You can mix different types of flour. Do not add too much of the candied tomato liquid to prevent the tart from becoming soggy. The tart can be prepared the day before and reheats well in the oven.
