Creamy Lime and Shrimp Risotto

- 1 1/2 cups arborio rice or risotto rice
- 14 oz raw peeled shrimp (medium size)
- 1 lime (zest and juice)
- 3/4 cup heavy cream
- 3 1/2 cups warm vegetable or seafood broth
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1.5 tbsp butter
- 1 tsp sweet paprika
- 1/2 tsp turmeric
- Salt and freshly ground black pepper
- A few sprigs of fresh chives for garnish
- 1 tbsp chopped flat-leaf parsley

Prepare all ingredients: finely dice the onion and garlic, zest and juice the lime, and heat the broth in a separate saucepan over low heat.

In a large skillet or heavy-bottomed pot, heat the olive oil over medium heat. Add the onion and sauté for 3 to 4 minutes until translucent.

Add the minced garlic and sauté for another minute, stirring to prevent burning.

Add the rice and toast for 2 minutes in the fat, stirring constantly, until the grains are slightly translucent at the edges.

Add the turmeric and half of the paprika, then pour in a first ladle of warm broth. Stir and let it absorb before adding the next. Repeat for 18 to 20 minutes, adding the broth ladle by ladle, until the rice is al dente and creamy.

While the rice is cooking, season the shrimp with the remaining paprika, salt, and pepper. In a separate pan, melt the butter over high heat and sear the shrimp for 1 to 2 minutes on each side until pink and lightly golden. Set aside.

When the rice is cooked and creamy, remove from heat and stir in the heavy cream, lime juice, and half of the zest. Stir gently to achieve a velvety texture. Adjust seasoning to taste.

Divide the creamy rice into shallow bowls, top with the shrimp, and sprinkle with the remaining lime zest, chopped chives, and parsley. Serve immediately.
