Directions
- 1
Remove margarine from the refrigerator 30 minutes before starting so it softens completely. Beat with an electric mixer on medium speed for about 1 minute until light and creamy.
- 2
Add the sifted powdered sugar in two or three batches, starting on low speed to prevent a sugar cloud, then increasing to high. Beat for 2–3 minutes until the mixture is smooth and fluffy.
- 3
Mix in your chosen extract and, if the frosting is too thick, add milk one tablespoon at a time to reach your desired consistency. Beat for an extra 30 seconds, then use immediately or refrigerate in an airtight container for up to 3 days.
💡 Chef's Tip
Gel food coloring blends in beautifully without affecting flavor. This batch frosts 6–8 cupcakes or covers one small cake layer. Double the recipe for a two-layer cake.
