A cloud-light, glossy cream built on the classic Swiss meringue technique — ideal for decorating cakes, pies, and frozen desserts. It holds its shape beautifully with no butter or heavy cream, making it a brilliant dairy-free alternative to traditional whipped cream. 🛒 Ingredients

1 servings

1
  • 4 egg whites, at room temperature
  • 1½ cups (150 g) powdered sugar, sifted
  • 1 teaspoon freshly squeezed lemon juice

Directions

  1. 1

Combine the egg whites and powdered sugar in a small heavy-bottomed saucepan. Stir with a spatula until fully blended.

  2. 2

Warm the mixture over very low heat, stirring constantly, for about 15 seconds — just enough to heat it slightly without cooking the whites. They must stay translucent throughout.

  3. 3

Immediately pour into the bowl of a stand mixer fitted with the whisk attachment. Beat on high speed for 20 minutes until the meringue is thick, glossy, and holds stiff peaks.

  4. 4

Add the lemon juice and continue beating for another 10 minutes until the cream is perfectly stable and shiny with firm bird-beak peaks.

  5. 5

Transfer to a piping bag and use right away to decorate cakes, tarts, cupcakes, or ice cream.

💡 Chef's Tip

Make absolutely sure your bowl and whisk are grease-free — even the tiniest trace of fat will prevent the egg whites from whipping up. The lemon juice is a natural stabilizer that also balances the sweetness. Decorate just before serving as this cream does not keep well.
