🛒 Ingredients

10 servings

10
  • 1 cup (150 g) roasted peanuts
  • 2 cups (500 ml) hot water
  • 5 tablespoons cornstarch
  • 5 tablespoons brown sugar or honey
  • 1 teaspoon fine salt

Directions

  1. 1

Add the roasted peanuts to a blender and process until you obtain a coarse, sandy meal.

  2. 2

Add the cornstarch and pulse briefly to combine evenly with the ground peanuts.

  3. 3

With the blender running, gradually pour in the hot water to scald the mixture and develop a smooth, lump-free texture.

  4. 4

Add the brown sugar (or honey) and salt, then blend for a further 1–2 minutes until the cream is silky and uniform.

  5. 5

Pour into an airtight jar and refrigerate near the coldest section of the fridge for a firmer set. Serve spread on whole grain bread or alongside crackers.

💡 Chef's Tip

For the smoothest result, chill the cream for at least 2 hours before serving. A pinch of cinnamon or a drop of vanilla extract makes a lovely addition.
