🛒 Ingredients

1 servings

1
  • 1 can sweetened condensed milk (14 oz / 397 g)
  • ¾ cup heavy cream (200 ml)
  • 3 large fresh eggs
  • 1 tsp pure vanilla extract
  • 1 tbsp dark rum (optional)

Directions

  1. 1

In a heavy-bottomed saucepan, whisk together the condensed milk, heavy cream, and eggs until fully combined and smooth.

  2. 2

Cook over medium-low heat, stirring constantly with a wooden spoon or spatula for 8 to 10 minutes, until the cream thickens and coats the back of a spoon.

  3. 3

Remove from heat and stir in the vanilla extract and rum if using. Press plastic wrap directly onto the surface to prevent a skin from forming.

  4. 4

Allow to cool to room temperature, then refrigerate for at least 1 hour before using as a cake filling. Pair with fresh fruits or flavor extracts as desired.

💡 Chef's Tip

For an extra silky texture, strain through a fine-mesh sieve right after cooking. Store in an airtight container in the fridge for up to 3 days.
