4
  • 1 can sweetened condensed milk (well chilled)
  • 1 can heavy whipping cream (well chilled)
  • 2 tablespoons full-fat powdered milk
  • 2 tablespoons pastry emulsifier

Directions

  1. 1

Chill the mixing bowl and whisk attachments in the refrigerator for 15 minutes before starting.

  2. 2

Pour the condensed milk, heavy cream, and emulsifier into the cold bowl.

  3. 3

Beat on medium speed for 15 minutes until the mixture thickens and increases in volume.

  4. 4

Add the powdered milk gradually while the mixer is still running.

  5. 5

Increase to high speed and beat for another 10 minutes until the frosting is very firm and holds stiff peaks.

  6. 6

Use immediately to fill, frost, or decorate your cakes and pies.

💡 Chef's Tip

Keep all ingredients very cold — this is the key to a thick, stable frosting. Work quickly once whipped, as it can soften at room temperature.
