🛒 Ingredients

1 servings

1
  • 1 can of dulce de leche (cooked condensed milk)
  • 150 g roughly chopped walnuts
  • 1 egg yolk, sieved
  • 1 egg white, beaten to stiff peaks
  • 150 ml heavy cream, very cold

Directions

  1. 1

In a heavy-bottomed saucepan, combine the dulce de leche, chopped walnuts, and sieved egg yolk. Cook over medium heat, stirring constantly with a spatula.

  2. 2

Continue stirring until the mixture pulls cleanly away from the sides and bottom of the pan. Gently fold in the stiff egg white using circular motions, then keep cooking and stirring until the filling detaches from the pan again.

  3. 3

Remove from heat and allow to cool for a few minutes. Gradually pour in the very cold heavy cream, stirring until the filling reaches a smooth, spreadable consistency — firm enough to layer but not stiff.

  4. 4

Let cool completely, then refrigerate for at least 20 minutes before spreading between cake layers.

💡 Chef's Tip

For a lighter, fluffier texture, whip the heavy cream to soft peaks before folding it in. Pecans or toasted hazelnuts make a wonderful swap for the walnuts.
