Directions
- 1
Boil the potatoes in salted water until very tender. Drain and mash until completely smooth.
- 2
In a skillet over medium heat, sauté the onion and garlic in a drizzle of olive oil for about 3 minutes until softened and lightly golden.
- 3
Add the shredded chicken and cook for 2 minutes to absorb all the flavors. Remove from heat and let cool slightly.
- 4
In a large bowl, mix together the mashed potato, chicken mixture, cream cheese, and herbs. Season with salt and pepper and stir until a uniform dough forms.
- 5
With lightly damp hands, shape the mixture into small croquettes.
- 6
Dip each croquette in beaten egg, then coat generously with panko breadcrumbs, pressing gently so the crumb sticks.
- 7
Place in the air fryer basket in a single layer and brush lightly with olive oil.
- 8
Air fry at 200 °C (390 °F) for 12–15 minutes, flipping halfway through, until deeply golden and crispy.
💡 Chef's Tip
To freeze: arrange the raw breaded croquettes on a tray and freeze for 1 hour, then transfer to a freezer bag. Cook straight from frozen at 200 °C, adding 5 extra minutes to the cooking time.
