🛒 Ingredients

6 servings

6
  • 1 kg (2.2 lbs) chicken thighs and drumsticks, skinless
  • 3 tablespoons Dijon mustard
  • 5 tablespoons soy sauce
  • 4 garlic cloves, minced
  • 1 teaspoon ground cumin
  • Juice of 1 lemon
  • Dried herbs (Herbes de Provence, thyme, or oregano) to taste
  • Salt and black pepper to taste

Directions

  1. 1

Clean and rinse the chicken pieces under cold water, then pat dry and remove the skin. Squeeze lemon juice over the chicken, press lightly to drain excess liquid, and season with minced garlic, salt, pepper, and ground cumin. Let rest for 15 minutes.

  2. 2

In a baking dish, coat each piece generously with Dijon mustard. Pour the soy sauce over the chicken and turn each piece to coat evenly. Sprinkle dried herbs over the top.

  3. 3

Preheat the oven to 400 °F (200 °C). Bake for 45–50 minutes, flipping the pieces halfway through, until deeply golden and the cooking juices are caramelized. Serve hot with roasted potatoes, steamed rice, or a crisp green salad.

💡 Chef's Tip

For deeper flavor, marinate the chicken in the refrigerator for up to 1 hour before baking. Add a drizzle of honey to the glaze for a beautiful caramelized, lacquered finish.
