Directions
- 1
Cook the white beans in a pressure cooker until very tender, then drain and set aside.
- 2
Blanch all the salted meats — except the tripe — in boiling water for a few minutes to remove excess salt.
- 3
Clean the tripe, carefully trim away the fat, then cut it very small and place it in the pressure cooker.
- 4
Cut all the salted meats into small pieces so they cook faster.
- 5
Boil the potatoes and carrots until tender, then drain and set aside.
- 6
Finely chop the bunch of parsley and chives.
- 7
Make the sauce: sauté the chopped onion and pepper in a little oil, then add the stock cube and a sachet of seasoning (sazón).
- 8
Stir in the tomato sauce, the olives and the chopped parsley and chives.
- 9
Add all the cooked ingredients and stir gently.
- 10
Simmer over low heat until the sauce thickens and coats everything.
💡 Chef's Tip
If you can, soak the beans overnight — they will cook faster and end up creamier. And don't skip blanching the salted meats, or the stew may turn out too salty.
