🛒 Ingredients

4 servings

4
  • 300 g chicken breast, diced
  • 4 ripe tomatoes, peeled and roughly chopped
  • 1 medium onion, finely chopped
  • 1 tsp extra virgin olive oil
  • 1 tsp minced garlic
  • 1 small bunch of fresh parsley and chives
  • 1 chicken stock cube
  • Salt and black pepper to taste

Directions

  1. 1

Heat olive oil in a medium saucepan over medium heat. Sauté the garlic until lightly golden and fragrant.

  2. 2

Add the chopped onion and cook, stirring occasionally, until softened and lightly caramelised.

  3. 3

Add the diced chicken and cook, stirring, until most of the released liquid has evaporated and the pieces are sealed.

  4. 4

Stir in the chopped tomatoes and crumbled stock cube. Cover and simmer over low heat.

  5. 5

If the sauce thickens too quickly, add a small splash of warm water — just enough to keep it saucy without becoming watery.

  6. 6

Cook until the sauce is rich and glossy. Stir in the freshly chopped herbs.

  7. 7

Remove from heat, rest for a few minutes, then serve alongside steamed rice.

💡 Chef's Tip

The riper the tomatoes, the sweeter and more flavourful your sauce will be. A pinch of smoked paprika or dried oregano adds a lovely depth.
