  • 1 packet (2 1/4 tsp) instant dry yeast
  • 3/4 cup warm water (about 100°F)
  • 2 tbsp extra virgin olive oil
  • 1 tsp fine salt
  • 1 tsp granulated sugar
  • 1/2 cup tomato sauce (passata or seasoned crushed tomatoes)
  • 7 oz fresh mozzarella (or shredded)
  • 3.5 oz sliced ham
  • 1/4 cup pitted black olives
  • 1 tsp dried oregano
  • 1 tsp extra virgin olive oil for finishing
  • Salt and freshly ground black pepper

    Preheat your oven to its highest setting, ideally 450-475°F (230-245°C) with convection. Place the rack in the lowest position to promote a crispy crust.

    In a large bowl, combine the flour, instant yeast packet, salt, and sugar. Make a well in the center.

    Pour the warm water and olive oil into the well. Mix first with a fork, then knead by hand for 5 minutes until you have a smooth, soft, and slightly elastic ball. Add a little flour if it's too sticky.

    On a floured surface, immediately roll out the dough with a rolling pin into a 12-13 inch disc of even thickness (about 1/8 inch). For the edges, leave a slightly thicker border.

    Spread the tomato sauce evenly over the dough, leaving a 1/2 inch border. Season with a little salt, pepper, and half of the oregano.

    Add the ham slices, arrange the black olives as desired, then sprinkle the remaining oregano over the top.
