  • 4 boneless, skinless chicken breasts (150 g each)
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves, crushed
  • Salt and freshly ground black pepper
  • White rice and sliced almonds to serve

Directions

    In a bowl, whisk together the balsamic vinegar, lemon juice, Dijon mustard and crushed garlic. Season with salt and pepper.

    Add the chicken breasts to the marinade, coat thoroughly, cover and refrigerate for at least 30 minutes.

    Preheat your grill or griddle pan over high heat for 5 minutes.

    Place the fillets on the hot grill, close the lid and cook for 5 minutes, basting occasionally with the leftover marinade.

    Collect the juices from the drip tray and drizzle over the chicken as a light, natural sauce.
