🛒 Ingredients

10 servings

10
  • 1 can (14 oz / 397 g) sweetened condensed milk
  • 2¼ cups (600 ml) whole milk
  • 4 large eggs
  • 14 oz (400 g) fresh cheese (ricotta or farmer's cheese)
  • 10.5 oz (300 g) guava paste
  • 1¼ cups (300 ml) filtered water
  • Butter and flour for greasing the pan

Directions

  1. 1

Preheat your oven to 350°F (180°C). Generously butter and flour a Bundt or ring mold pan.

  2. 2

In a blender, combine the condensed milk, whole milk, eggs, and fresh cheese. Blend until completely smooth.

  3. 3

Pour the mixture into the prepared pan and cover tightly with aluminum foil to prevent a crust from forming on top.

  4. 4

Set the pan inside a larger baking dish filled with hot water and bake in a water bath for 1 hour 30 minutes.

  5. 5

Remove from the oven and let cool at room temperature for 2–3 hours, uncovered.

  6. 6

Once fully cooled, carefully unmold onto a serving plate and refrigerate for at least 2 hours.

  7. 7

In a small saucepan over low heat, melt the guava paste with the water, stirring until you get a smooth, pourable sauce.

  8. 8

Just before serving, pour the warm guava sauce generously over the flan and slice at the table.

💡 Chef's Tip

Ricotta or cream cheese work beautifully if Brazilian Minas cheese is unavailable. Guava paste can be found in Latin American or Caribbean grocery stores. The sauce can be made a day ahead and gently reheated before serving.
