🛒 Ingredients

6 servings

6
  • 2 cans (14 oz / 400 g each) sweetened condensed milk
  • ¾ cup (200 ml) passion fruit juice
  • 4 large eggs
  • 2 tablespoons unsalted butter, melted
  • 2 large ripe passion fruits (for the sauce)
  • 3 tablespoons granulated sugar (for the sauce)

Directions

  1. 1

Preheat your oven to 350 °F (180 °C). Grease and lightly flour a 9-inch round baking pan.

  2. 2

Combine the condensed milk, passion fruit juice, eggs, and melted butter in a blender. Blend for about 1 minute until smooth and well combined.

  3. 3

Pour the batter evenly into the prepared pan.

  4. 4

Set the pan inside a larger roasting dish and carefully pour hot water into the outer dish until it reaches halfway up the sides of the pan.

  5. 5

Bake for 60 minutes, or until the flan is set and a toothpick inserted in the center comes out clean.

  6. 6

Remove from the oven, allow to cool completely at room temperature, then refrigerate for at least 2 hours.

  7. 7

For the passion fruit sauce, scoop the pulp and seeds into a small saucepan, add the sugar, and stir over low heat for 3 minutes until slightly thickened.

  8. 8

Unmold the chilled flan onto a serving plate, spoon the sauce over the top, and serve cold.

💡 Chef's Tip

For an extra-smooth texture, strain the passion fruit juice before blending. The sauce keeps in the fridge for up to 3 days.
