🛒 Ingredients

  • 1 can of sweetened condensed milk (397 g)
  • 1½ cans of whole milk (about 600 ml)
  • 4 eggs
  • 10 tablespoons of sugar
  • 8 tablespoons of water

Directions

  1. 1

In a large bowl, whisk the eggs, condensed milk and whole milk until the batter is completely smooth.

  2. 2

Pour the sugar and water straight into a glass ring mould, then stir briefly so all the sugar is moistened.

  3. 3

Microwave the mould on full power for about 5 minutes, until the syrup turns a lovely amber colour.

  4. 4

Take the mould out and stir the caramel with a spoon so the colour is even.

  5. 5

For a darker caramel, cook for one more minute, adjusting to your taste.

  6. 6

Gently pour the flan batter over the caramel, then return the mould to the microwave on full power for 8 to 10 minutes.

  7. 7

Let it cool down, refrigerate for at least 3 hours, then turn it out onto a shallow serving dish.

💡 Chef's Tip

Microwaves vary from one appliance to another: start with the shortest time and add a minute if needed. Let the flan cool completely before chilling — the cold is what sets the texture. For a clean unmoulding, run a knife blade around the edge before flipping the mould.
