  • 1 can sweetened condensed milk (14 oz / 397 g)
  • 1 cup heavy whipping cream (200 ml)
  • 3¼ cups whole milk (approx. 800 ml)
  • 10 tablespoons unsweetened cocoa powder
  • 1 envelope unflavored powdered gelatin (¼ oz / 7 g)
  • 3 tablespoons cold water to bloom the gelatin

Directions

    Bloom the gelatin: sprinkle the powder over 3 tablespoons of cold water, stir gently and let it sit for 5 minutes. Dissolve by setting the bowl in a warm water bath or microwaving for 15 seconds until fully liquid and clear.

    Combine the sweetened condensed milk, heavy cream, whole milk, and cocoa powder in a blender. Blend on high for 1 minute until completely smooth and lump-free.

    Add the dissolved gelatin while still warm to the blender and blend for an additional 30 seconds to fully incorporate.

    Pour the mixture into individual serving glasses or a lightly greased mold of your choice.

    Cover with plastic wrap and refrigerate for at least 4 hours, or overnight, until firmly set.

💡 Chef's Tip

For a deeper chocolate flavor, replace the cocoa powder with 150 g of melted dark chocolate. A shot of espresso added to the blender will intensify the cocoa notes beautifully. This flan keeps for up to 3 days in the fridge.
