🛒 Ingredients

12 servings

12
  • 1 can sweetened condensed milk (14 oz / 397 g)
  • ¾ cup heavy cream (200 ml), well chilled
  • 1 cup whole milk (250 ml)
  • 1 packet unflavored gelatin powder (¼ oz / 7 g)
  • 3 tablespoons granulated sugar (for the caramel)

Directions

  1. 1

Pour the milk into a small bowl, sprinkle the gelatin powder over it and let it bloom for 5 minutes. Gently warm, stirring until fully dissolved.

  2. 2

Add the condensed milk, chilled heavy cream and the gelatin mixture to a blender. Blend on high for 2 minutes until perfectly smooth and creamy.

  3. 3

Add the sugar to a flan mold and cook over medium heat, stirring constantly, until a golden caramel forms. Tilt the mold to coat the sides evenly and let cool completely.

  4. 4

Pour the blended mixture over the cooled caramel in the mold.

  5. 5

Freeze for at least 1 hour, then unmold onto a serving plate and refrigerate until ready to serve.

💡 Chef's Tip

Run a thin knife around the edges before unmolding for a clean release. For a firmer texture, leave in the freezer for an extra 30 minutes.
