🛒 Ingredients

10 servings

10
  • 2 packets pineapple-flavored gelatin
  • 1 can sweetened condensed milk (14 oz / 397 g)
  • 1 cup light cream or heavy cream (200 ml)
  • 1 can coconut milk (200 ml)
  • 1 medium fresh pineapple
  • ½ cup granulated sugar
  • Juice of half a lime

Directions

  1. 1

Peel and dice the pineapple into small cubes. In a saucepan, simmer the pineapple with the sugar and lime juice over medium heat for about 15 minutes until lightly caramelized. Set aside and allow to cool completely.

  2. 2

Prepare the gelatin according to the package directions, using slightly less cold water than indicated for a firmer set. Let it cool to lukewarm.

  3. 3

In a blender, combine the condensed milk, cream, coconut milk, and half of the caramelized pineapple. Blend until completely smooth and creamy.

  4. 4

Add the lukewarm gelatin to the blender and blend for an additional 30 seconds until fully incorporated.

  5. 5

Arrange the remaining pineapple pieces in the bottom of a lightly greased flan mold to create a natural, colorful decoration.

  6. 6

Gently pour the creamy mixture over the pineapple. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight, until fully set.

💡 Chef's Tip

To unmold cleanly, briefly dip the bottom of the mold in hot water for a few seconds before flipping onto a serving plate. Garnish with fresh mint leaves or toasted coconut flakes for an extra tropical touch.
