  • 6 tbsp melted butter
  • 1/2 cup granulated sugar
  • 1/2 tsp ground cinnamon
  • 2 1/2 cups milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 3 egg yolks
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 3 egg whites
  • 1/4 cup granulated sugar
  • 1/4 tsp cream of tartar

    Preheat the oven to 350°F.

    In a bowl, mix the graham cracker crumbs, melted butter, 1/2 cup of sugar, and cinnamon. Reserve 2 tbsp of the mixture for the topping. Press the rest into a 9-inch pie dish. Bake for 10 minutes until lightly browned.

    In a saucepan, combine the milk, 1/2 cup of sugar, cornstarch, egg yolks, vanilla extract, and salt. Cook over medium heat, stirring constantly, until boiling and thickened. Let cool.

    Whisk the egg whites with the cream of tartar until soft peaks form. Gradually add 1/4 cup of sugar while continuing to whisk until stiff, glossy peaks form.

    Pour the custard into the crust. Cover generously with meringue, forming small peaks. Sprinkle with the reserved crust mixture.
