🛒 Ingredients

1 servings

1
  • 1½ cups sweetened cocoa powder
  • 1½ cups granulated sugar
  • 1 cup whole milk
  • 2 tablespoons unsalted butter
  • 1 pinch of fine salt

Directions

  1. 1

In a heavy-bottomed saucepan, whisk together the cocoa powder, sugar, and salt until evenly combined.

  2. 2

Pour in the milk gradually while whisking continuously to prevent lumps and achieve a smooth batter.

  3. 3

Cook over low heat, stirring constantly with a spatula, until the mixture thickens and coats the back of a spoon.

  4. 4

Remove from heat and stir in the butter until fully melted and the filling is glossy and smooth.

  5. 5

Spread over cake layers immediately while still warm, or allow to cool slightly for a firmer, fudge-like consistency.

💡 Chef's Tip

For a richer filling, swap 3 tablespoons of milk for heavy cream. Keep stirring the whole time — stopping even briefly can cause the sugar to scorch on the bottom.
