8 servings

8
  • 2 lbs (1 kg) peeled and deveined shrimp
  • salt and black pepper, to taste
  • juice of 1 lemon
  • 3 tablespoons olive oil
  • 1 large onion, grated
  • 4 garlic cloves, minced
  • 3 tomatoes, peeled and diced
  • fresh parsley and chives, chopped, to taste
  • 14 oz (400 g) crushed tomatoes or tomato sauce
  • 7 fl oz (200 ml) heavy cream
  • 1 can (10 oz / 285 g) corn kernels, drained
  • grated Parmesan cheese, to taste
  • 14 oz (400 g) cream cheese, softened
  • 9 oz (250 g) fresh mozzarella, sliced
  • potato chips or shoestring fries, for serving

Directions

  1. 1

Rinse the shrimp and season with salt, pepper, and lemon juice. Let marinate for 15 minutes.

  2. 2

Heat olive oil in a large skillet over medium heat. Sauté the grated onion until soft and translucent.

  3. 3

Add the minced garlic, diced tomatoes, parsley, and chives. Cook for 3–4 minutes, stirring occasionally.

  4. 4

Stir in the shrimp and crushed tomatoes. Simmer for about 5 minutes until the shrimp are pink and cooked through. Set aside.

  5. 5

Blend the drained corn with the heavy cream and grated Parmesan until completely smooth.

  6. 6

Preheat oven to 390°F (200°C). Spread the cream cheese evenly across the bottom of a baking dish and top with the shrimp mixture.

  7. 7

Pour the corn cream over the top and cover with sliced mozzarella.

  8. 8

Bake for 15–20 minutes until bubbly and golden brown on top.

  9. 9

Serve hot with white rice and crunchy potato chips on the side.

💡 Chef's Tip

Add a pinch of smoked paprika or chili flakes to the shrimp marinade for an extra kick. Cream cheese can be swapped for ricotta for a lighter, more delicate version.
