🛒 Ingredients

10 servings

10
  • 1 whole chicken, cut into pieces (or 4 bone-in thighs)
  • 200 g button mushrooms, sliced
  • 200 ml heavy cream
  • 150 ml dry white wine
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 bouquet garni (thyme, bay leaf, parsley)
  • 30 g butter
  • 2 tbsp all-purpose flour
  • 200 ml chicken stock
  • Salt and freshly ground black pepper

Directions

  1. 1

Season the chicken with salt and pepper. Melt butter in a Dutch oven over medium heat and brown the chicken on all sides for about 5 minutes. Set aside.

  2. 2

In the same pot, sauté the diced onion and garlic over low heat until translucent, about 3 minutes.

  3. 3

Add the sliced mushrooms and cook over high heat for 3–4 minutes until golden.

  4. 4

Sprinkle the flour over the vegetables and stir to coat. Deglaze with white wine and let reduce for 2 minutes, scraping up any browned bits.

  5. 5

Return the chicken to the pot, pour in the stock and add the bouquet garni. Cover and simmer over low heat for 35–40 minutes.

  6. 6

Remove the bouquet garni, stir in the heavy cream and adjust seasoning. Simmer uncovered for 5 more minutes until the sauce thickens.

  7. 7

Serve hot with steamed rice, egg noodles, or crusty French bread.

💡 Chef's Tip

Add a squeeze of lemon juice and a pinch of nutmeg to the cream before stirring it in for extra depth. This dish reheats beautifully the next day.
