  • 200 g heavy cream, at room temperature
  • — Milk Chocolate Ganache —
  • 200 g milk chocolate
  • 150 g heavy cream, at room temperature
  • — White Chocolate Ganache —
  • 200 g white chocolate
  • 100 g heavy cream, at room temperature

    Finely chop the chocolate with a knife or use chocolate chips for more even melting.

    Melt the chocolate in a double boiler or microwave in 20-second bursts, stirring well between each interval until fully melted.

    Allow the melted chocolate to cool slightly at room temperature for a few minutes.

    Pour the room-temperature cream over the chocolate and blend with an immersion blender until the ganache is smooth and glossy.

    Press plastic wrap directly onto the surface of the ganache to prevent a skin from forming.
