🛒 Ingredients

1 servings

1
  • 500 g (17.5 oz) semi-dark chocolate, finely chopped
  • 400 ml (1 ¾ cups) heavy whipping cream
  • 100 g (3.5 oz) unsalted butter, at room temperature
  • 3 tablespoons granulated sugar

Directions

  1. 1

Finely chop the chocolate and place it in a heatproof bowl set over a pot of barely simmering water (double boiler). Stir gently until fully melted and smooth. Remove from heat and allow to cool for 5 minutes.

  2. 2

In a separate bowl, beat the room-temperature butter with an electric mixer for 3–4 minutes until light, pale, and fluffy.

  3. 3

With the mixer on medium speed, slowly pour the lukewarm melted chocolate into the butter in a thin stream. Add the heavy cream and sugar, then continue beating for 2–3 minutes until the ganache is silky, glossy, and fully combined.

  4. 4

Use immediately as a pourable glaze or refrigerate for 20 minutes for a firmer consistency suitable for piping and spreading.

💡 Chef's Tip

For a more intense flavour, use 70% dark chocolate. Store in an airtight container in the fridge for up to 5 days — bring back to room temperature or microwave in 10-second bursts before using.
