  • 2 medium carrots
  • 4 eggs
  • 1 cup (240 ml) sunflower oil
  • 1½ cups (300 g) sugar
  • 2 cups (260 g) all-purpose flour
  • 1 tbsp baking powder
  • 8 tbsp sugar (for glaze)
  • 8 tbsp unsweetened cocoa powder
  • 4 tbsp milk
  • 2 tbsp butter

Directions

    Preheat oven to 350 °F (180 °C). Peel and chop the carrots. Blend with eggs, oil, and sugar for about 5 minutes until completely smooth.

    Pour the mixture into a large bowl and gently fold in the flour in batches, using a spatula to keep the batter light and airy.

    Add the baking powder and fold gently until fully incorporated.

    Pour batter into a greased and floured cake pan. Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
