Directions
- 1
Preheat oven to 180 °C (350 °F). Grease and flour a 22–24 cm cake pan.
- 2
Place eggs, milk, and melted butter into a blender. Blend for 45 seconds until you have a smooth, well-combined mixture.
- 3
Pour the blended mixture into a large bowl. Gradually fold in the sifted flour using a spatula, stirring gently to prevent lumps from forming.
- 4
Add the unsweetened cocoa powder and powdered sweetener. Stir until the batter is completely smooth and even in colour.
- 5
Gently fold in the baking powder last, using slow circular movements to keep the batter light and airy.
- 6
Pour the batter into the prepared pan and bake for 30 to 40 minutes, or until a toothpick inserted in the centre comes out clean.
💡 Chef's Tip
Allow the cake to cool completely on a wire rack before unmoulding for the best texture. You can swap regular milk for any plant-based milk and use coconut oil instead of butter for a dairy-free version.
