  • 2½ cups (300 g) all-purpose flour
  • ½ cup (100 g) granulated sugar
  • 1 cup (340 g) liquid honey, plus extra for drizzling
  • 1 cup (250 ml) whole milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon (optional)

Directions

    Preheat your oven to 350 °F (180 °C). Grease and flour a 9-inch (24 cm) round cake pan.

    Place the eggs, milk, and honey in the blender. Blend on medium speed for about 1 minute until smooth and well combined.

    Add the sugar and blend for 30 seconds, then gradually add the flour in two batches, blending briefly after each addition to keep the batter lump-free.

    Add the baking powder and cinnamon (if using) and blend for a few more seconds until the batter is completely uniform.

    Pour the batter into the prepared pan and bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

    Allow the cake to cool for 10 minutes, then turn out onto a wire rack. Drizzle warm honey generously over the top before serving.

Use a bold-flavored honey such as buckwheat or wildflower for a more aromatic cake. Substitute whole milk with buttermilk for an even fluffier crumb. Leftovers keep well under a cake dome at room temperature for up to 3 days.
