  • 3 medium apples, peeled and diced
  • Peels from 4 medium apples
  • 3 large eggs
  • 3 tablespoons butter or margarine, melted
  • 1 cup (250 ml) milk
  • 200 g (7 oz) raisins
  • 1 tablespoon ground cinnamon
  • 2 cups (240 g) oat flour (blended rolled oats)
  • 1 tablespoon baking powder

Directions

  1. 1

Preheat the oven to 200 °C (390 °F) and grease a cake pan.

  2. 2

Add the raisins, apple peels, eggs, milk, melted butter, and cinnamon to a blender. Blend for 5 minutes until smooth.

  3. 3

In a large bowl, combine the oat flour with the blended mixture and stir until well incorporated.

  4. 4

Gently fold in the baking powder, being careful not to overmix.

  5. 5

Add the diced apples and stir lightly to distribute them evenly throughout the batter.

  6. 6

Pour into the prepared pan and bake for 45 minutes, or until a toothpick inserted in the center comes out clean.

  7. 7

Cool for 10 minutes in the pan before unmolding. Serve warm or at room temperature.

💡 Chef's Tip

Sprinkle extra cinnamon on top before baking for a fragrant crust. Microwave option: cook on full power for 10 minutes in a microwave-safe mold. Stores well in an airtight container for up to 3 days.
