  • 300 g (10.5 oz) canned corn, drained
  • 3 eggs
  • 300 ml (1¼ cups) whole milk
  • 150 ml (⅔ cup) vegetable oil
  • 300 g (2 cups) fine cornmeal or corn semolina
  • 1 tablespoon baking powder
  • 150 g (¾ cup) granulated sugar
  • Butter and sugar for greasing the pan

Directions

    Preheat your oven to 180 °C (350 °F). Grease a round cake pan with butter and coat it evenly with granulated sugar.

    In a blender, combine the drained corn, eggs, milk, oil, and sugar. Blend on high until completely smooth.

    Gradually add the cornmeal on low speed, blending until fully incorporated into a smooth batter.

    Add the baking powder and blend for an additional 30 seconds.

    Pour the batter into the prepared pan and bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

💡 Chef's Tip

The classic Brazilian trick: use the empty corn can as a measuring cup for all other ingredients — simple and foolproof! For extra moisture, swap half the cornmeal for desiccated coconut.
